BLUEBERRY OATMEAL JARS

The winter mood set in deeply, because of all those long cold gray days… but not today! The sun rays are doing their magic, as tons of snow started to melt and spring flowers make their way up for a gorgeous bloom. Comfort food has been a top priority these winter months, therefore warm bowls were my way of nourishing my body and soul. I hope you enjoy these cute blueberry oatmeal jars either for a quick breakfast or an all-time, anytime snack.

ALL YOU NEED

for the oatmeal:
1 cup of oats, fine
1/2 cup water or your preferred plant milk
1 tbsp coconut oil/cacao butter
1 tbsp cacao powder

for the blueberry jam:
1/3 cup blueberries, fresh or frozen
2 tbsp coconut sugar
1 tbsp coconut oil
1 tbsp chia seeds
dash of powdered ginger

HOW TO MAKE

Put all blueberry jam ingredients in a pan and let them simmer for 5 minutes at low heat. Stir occasionally. In a casserole add the oatmeal, water/milk, or a mix of both, cacao powder, coconut oil, and/or cacao butter and let it boil. Lower the heat and stir to avoid the bottom from burning. My SECRET is to have the ready oatmeal semi-liquid, as it thickens after a few minutes and it won’t make you thirsty the whole day. So feel free to add extra water or milk gradually by stirring with a wooden spoon. Remove from heat once the flakes rise. The secret behind the smoothness and rich flavor comes also from the coconut oil and cacao butter, so you better not skip them!

Split the oatmeal into two jars, and start layering maple syrup on top, chocolate chunks over the hot oatmeal. Add coconut yogurt, blueberry chia jam, extra berries, and chocolate chunks. I always sprinkle mine with maca or coconut sugar as it gives it a nice texture and contrast on top.

Add all the magic on top and serve immediately. Have a gorgeous start to the week. Do not compromise with food. It’s energy.
