Raw Dark Chocolate Chips Cookies

No bake chocolate chip cookies. They are so easy to prepare, but if you still got something else on your mind, your kids would love to do them for sure. Crunchy from hazelnuts, deep chocolatey and still soft from the fruits. Dates make these cookies sweet, so no worries about the sugar, it’s packed with fibers.

All you need

1 cup dates, soft and pitted
1/2 cup walnuts, raw
1/2 cup oat flakes, fine
1 tbsp hazelnut butter/ tahini
1 tsp ginger
dark vegan chocolate chips/ drops

 

Sprinkle some magic

extra dark chocolate chips, for melting
hazelnuts, raw, chopped
sea salt crystals

 

How to make

Process the dates in a food processor first. Add the rest of the ingredients and pulse a few times
Take the raw cookie dough and form balls either by rolling out the dough and using cookie cutters (or a coffee cup) or form into balls and then press each cookie flat.
Melt the chocolate in a water bath. Drizzle on top.
Add magic by sprinkling the chopped hazelnuts and sea salt crystals on top. Ready to serve.
Keep in a cool place.

    I just tried out a spring version of this recipe with strawberries and the cookies turned out amazing! Love it!
